Cricket Flour Used For Healthy Lunch

DESCRIPTION

IDEO and Bitty Foods, a company seeking alternative sources of protein, made an attempt to include cricket flour into the ingredients of daily lunchbox food for kids. Cricket flour contains a lot of protein, iron, or Omega-3 fatty acids. It is also one of the most ecological sources of protein as its production does not require much water, almost no waste is generated and no greenhouse gases are released. It tastes well and is suitable for making tasty and good-looking food products. IDEO and Bitty Foods set up a challenge: how to introduce cricket flour to consumers as an attractive, nourishing and ecological alternative to traditional flour. The main target of the project were children’s lunchbox meals. Lunch or elevenses are meals where eating behaviours are more fluid and to a lesser extent defined by a cultural background comparing to a morning breakfast or a dinner. Parents often try to prepare kid’s lunchbox meals in an attractive and funny way. Kids often show or even exchange their lunchbox snacks to one another thus being encouraged to talk about food. It is then a perfect opportunity to learn new tastes and dishes, including those based on cricket flour. Moms became the key target group as they were looking for healthy alternatives to lunchbox meals. Bitty Foods had a task to convince both mothers and children to their food products. A series of workshops were organized to give parents and kids an opportunity to talk separately about their perception of healthy food and ingredients. A table was then arranged with various snacks, both typical unhealthy ones and more healthy options including cricket flour (crackers, cookies). All snacks were identified. Kids did not hesitate much to choose products based on cricket flour while parents demonstrated more reservations. On the basis of these workshops and feedback from kids some new spicy snacks were already created with future plans to make tortillas, bread or pasta.

JUSTIFICATION

A very ecological project that took up a challenge of producing high-protein food worldwide. By targeting the youngest age groups it aimed at convincing the kids that there are many tasty and attractive food products, which production is not invasive to the planet and its resources.
